

Serves 6; 2 pancakes per serving
1 ½ cups whole wheat flour
½ cup crushed low-sugar bran cereal
2 tsp. baking soda
¾ cup evaporated skim milk
2 eggs beaten
1 Tbsp. brown sugar
1 Tbsp. canola oil
2 tsp. vanilla
Non-stick cooking sprayCombine all ingredients and mix until blended. Drop batter, ¼ cup at a time, onto a hot griddle sprayed with nonstick cooking spray. Cook until brown on both sides, turning once, about 5-6 minutes. Serve with jam or fruit if desired. You can modify this recipe by adding fruit, nuts, or flavored extracts.
