Home-Style Turkey Soup
Ingredients:
1 Turkey Carcass
4 C water
8 C reduced sodium chicken broth
4 large onions, 1 quartered, and 3 chopped
1 C diced rutabaga or turnip, peeled
1 C chopped celery
4 carrots, peeled and cut into thin strips
¼ C chopped fresh parsley
¼ tsp dried thyme
1 bay leaf
½ tsp ground black pepper
¼ C pearl barley
1-14 oz can unsalted tomatoes
1-16 oz can white beans, rinsed and drained
½ pound left over light turkey meat, cut into bite-sized chunksInstructions:
