Serves 6; 3-4 oz. per serving
· ¼ cup orange juice
· 1 tsp. orange peel
· 1 Tbsp. olive oil
· 1 Tbsp. lime juice
· 1 tsp. minced ginger
· 2 garlic cloves, minced
· ¼ tsp. hot pepper sauce
· ½ tsp. minced fresh oregano
· 1 ½ lb. boneless, skinless chicken breasts, halved
In a blender, combine all ingredients except the chicken. Pour the marinade over the chicken breasts and marinate in the refrigerator at least 2 hours or up to 48 hours.
Grill or broil the chicken for about 6 minutes per side or until no trace of pink remains.
