Greek Spinach

 

Ingredients: 
10 oz package of frozen, no salt added chopped spinach
½ C frozen no salt added pearl onions
½ tsp dried oregano, crushed
½ tsp finely shredded lemon peel
1 Tbsp lemon juice
½ tsp bottled minced garlic
¼ C crumbled feta cheese (1 ounce)

Instructions:

    1. Cook spinach according to package directions, but add onions to saucepan. 
    2. Drain well squeezing as much moisture as possible from mixture.
    3. Add remaining ingredients except feta cheese and stir until well combined.
    4. Sprinkle with feta cheese and toss to combine.
