Garden Turkey Burger

Serves 6
·        1 pound lean ground turkey breast
·        1 cup finely chopped red onion, rinsed
·        ½ cup finely chopped red bell pepper
·        1 large egg white
·        ¼ cup chopped fresh watercress leaves
·        3 tablespoons teriyaki sauce
·        1 to 2 teaspoons jerk seasoning (to taste)
·        Salt and freshly ground black pepper (to taste)
·        Canola oil cooking spray

In a large bowl, combine ground turkey, chopped red onion, bell pepper, egg white, watercress leaves, teriyaki sauce, and jerk seasoning, and salt and pepper to taste.  Stir until well blended.  Form the turkey mixture into 6 equal patties.
Heat a non-stick griddle or large non-stick skillet over medium-high heat and spray trice lightly with canola oil cooking spray.  Place each patty on griddle, in batches if necessary, and cook for 3 to 5 minutes on each side.  The burgers should not be pink in the middle.  (You can also do this on an outdoor grill).
Remove the burgers from the heat and serve as desired in a whole wheat bun.
