BOCA® Roasted Vegetable Chili

Serves 6; 1 cup per serving
1 medium chopped yellow pepper
1 medium yellow squash or zucchini, chopped
1 ½ medium eggplant, peeled and chopped
¼ cup chopped red onion
2 medium garlic cloves, minced
2 Tbsp. vegetable oil
1 can tomato sauce, 10 oz.
1 can chili beans, 15 oz.
1 pkg. frozen BOCA® Meatless Ground Burger, 12 oz.

Preheat oven to 450 degrees F. Toss vegetables with garlic and oil in 13x9-inch baking pan.
Bake 15 minutes or until pieces are well browned in centers and slightly blackened around edges. Place in large saucepan. Add remaining ingredients, mix well. Cover.
Cook on medium-high heat 5 minutes or until heated through, stirring occasionally.
